Wine Tasting Notes
The dark, opaque color portends the excitement to come! This wine opens up with aromas of dense black fruit concentration including blackberry, loganberry, cassis and currants. The second layer is tobacco, white and black pepper, and clove with nuances of cinnamon. The palate entry is again black fruits and spice that flows immediately into a silky, chocolatly coating that fills the mouth and lingers throughout the finish. There is a small grip that reveals structure and aging potential. Food pairings are hearty: osso buco, venison, other marinated meats, cassoulet and strong cheeses such as cheddar, stilton, and triple creams.
